Energy Bar Recipe

 Have you ever read some of the labels of popular granola bars? You may be surprised what is hiding in such a so-called "healthy" granola bar! They can be full of high-fructose corn syrup, sugar, and ingredients that are so difficult to even pronounce. I love how Larabar makes bars with minimal ingredients but since they can be expensive, I wanted to create a homemade Larabar recipe that can easily be made at home.

 

 

 

 

INGREDIENTS:

 1/4 cup (60 ml) salted butter, melted

• 1 cup (250 ml) finely grated coconut, unsweetened

• 3/4 cup (180 ml) dark or milk chocolate chips

• 3/4 cup (180 ml) pecans, coarsely chopped

• 3/4 cup (180 ml) sweetened condensed milk

 

INSTRUCTIONS:

•With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line a 20-cm (8-inch) square pan with two strips of parchment paper, letting them hang over each side. Set aside.

• Cover the bottom of the pan with crackers. Break some if needed. Drizzle the crackers with the butter and scatter the coconut, pressing lightly. Sprinkle with the chocolate chips and pecans. Cover with the sweetened condensed milk.

•Bake for about 30 minutes or until golden brown. Let cool completely. Remove from the pan and cut into 18 bars.
