Pumpkin with Organic Acacia Honey
If you're looking for a side dish that's slightly different to the classic salad, this scrumptious high-fiber antioxidant pumpkin recipe is your must-try.
Ingredients:
- 2 tbsps grated Parmesan cheese
- 1 tbsp vomFass Basil Extra Virgin Olive Oil
- 1 small pumpkin, seeded and cut into 8 wedges
- ¼ cup toasted blanched hazelnuts
- 1 tbsp parsley leaves
- 2 tbsps Hexapi Honey - Organic Acacia Honey
- 1 tablespoon sea salt
- ½ teaspoon cayenne pepper
Steps:
1. Preheat the oven to 180°C.
2. Place the pumpkin flesh side up.
3. Season with the sea salt and cayenne pepper and then drizzle with the olive oil.
4. Cover with foil.
5. Bake until fork-tender, about 35 minutes.
6. Remove the foil and drizzle the pumpkin with the honey.
7. Arrange on a platter and sprinkle with the cheese.
8. Garnish with the hazelnuts and parsley. Serve warm.
